Hoshigaki 3.0

Persimmons, washed

Oh yes, kittens, it's that time again. I've procured some lovely firm hachiya persimmons from Twin Girls Farm. It's hoshigaki time!

Last year's batch was not without pitfalls. I lost about half to mold, and the remainder dried successfully, but the sugar didn't bloom -- at first. More on that later, as I test my theory this year, especially since we seem to be headed for another dry winter.

Persimmons, peeled

Gave these girls a nice peel all over, and brought them down to the basement to hang.

Hoshigaki, hung

And now we wait. Wish me luck, hey?
